Salads are a quick and easy way to create hearty, satisfying meals. If you’re short on time or don’t feel like cooking, just take a look in your fridge. Most of the ingredients you’ll need are probably already there. Try these simple salads the next time you need a healthy meal in a pinch:
- Rethink Your Greens: Use a variety of greens and experiment with different flavors. Compliment bitter greens, such as arugula, with sweet dressing or toppings like dried cherries. Add protein to fill you up and round out your salad. Grilled chicken, fish, or meat are good options; leftovers make it even easier. If you’re vegan or vegetarian, beans, peas or shelled edamame are excellent plant proteins to top off your salad.
- Go Retro: Toss together an old fashioned tuna noodle salad like mom used to make, but with a flavorful twist. Pump up the nutrition with whole grain pasta, peas, and generous amounts of diced veggies. Add some tang with sliced radishes and add color by mixing in a couple handfuls of baby spinach. Start with a bed of salad greens, then top it with leftovers from last night’s dinner such as salmon, chicken, bell peppers, sliced mushrooms, and roasted potatoes. Hard boiled eggs are another great way to add protein.
