FOOD
  1. Preheat oven to 425°F.

  2. Spray baking sheet pan with nonstick cooking spray. In a bowl, toss squash, 1 tablespoon olive oil, and salt until evenly coated. Spread squash in a single layer on baking sheet pan. Roast for 30 to 35 minutes, turning once, until golden brown and tender.

  3. Meanwhile, heat 1 teaspoon oil in a large skillet over medium heat. Add onion and sausage, stirring occasionally for even browning for about 8 minutes.

  4. Turn heat to low. Add apple and stir, until soft, about 5 minutes.

  5. Add roasted butternut squash to pan and gently mix. Remove from heat.
