1. Empty all cans (only drain the corn) into a large pot over medium heat. Bring to a boil; add the pasta and spinach. Continue to cook simmering over medium heat for 10 minutes.

  2. Turn off heat and stir in shredded cheese until melted and combined.

  3. Serve soup topped with diced avocado and crushed applause crackers (optional).
